Product Description
This unique grape beverage has been produced for centuries in the Italian region of Emilia Romagna. The ancient craft of slowly cooking fresh grape juice (in Italian, Mosto dUva) in huge kettles and reducing it to a rich liquid is being preserved by artisans like Adriano Guerzoni and his sons. Selected grapes (Salamino, Fortana, and Lancellotta ) from Biodynamic agriculture are pressed and cooked to produce a grape juice reminiscent of a sweet wine. Cooking the juice softens the sugars and concentrates the flavor. The resulting drink is rich and satisfying, with an exceptionally smooth finish. Food writer Florence Fabricant, in The New York Times of Aug. 7, 2002, said, "It is not surprising to find a suggestion of balsamic vinegar in Purely Organic's Mosto d'Uva grape juice. Like many good balsamic vinegars, the juice is made in Modena, Italy, and cooked to concentrate the flavor. Unlike balsamic vinegar, it is not fermented. On its own, the juice is excellentrich and grapy, not too sweet. But it is also a fine addition to dessert sauces and compotes, and an admirable nonalcoholic substitute for wine in dishes of cooked meats." Biodynamic agriculture is a step beyond organic, and was developed decades before the organic movement began. Biodynamic methods bring agriculture into harmony with nature while complying with all organic standards. Special composting and homeopathically diluted sprays are used to promote healthy soil and disease- and insect-resistant plants.
