Review of La Nonna's Lemon Blossom Honey - 8.5oz.

I was very pleased with this. While sweet and floral, it has a tart flavor that builds as an aftertaste. It is similar to a good lemon candy. The honey was crystallized when I received it, but it crystallized so fine it has the texture of butter. I look forward to using this in teas. It would probably be good in baking, but it has such a wonderful tart sweetness I would be hesitant to loose that to other flavors in cooking.

Honey is an incredibly romantic, nearly magical product of nature, particularly if the beekeeper is an old Sicilian gentleman named Salvatore Vultaggio. When he was a child his father taught him the art of collecting honey and how to talk softly to the bees while working. This seems to keep the bees calmer while he is in their midst.La Nonna's honey is extracted with a centrifuge, rather than heat, which is the way common supermarket honeys are extracted. Heat extraction is quicker and less expensive and makes the honey smooth and clear, but it also destroys some of the delicate and distinctive flavors, as well as the beneficial amino acids and enzymes. Raw, virgin honey like La Nonna will naturally crystallize over time.Another single flower honey from Salvatore Vultaggio, this one has a light, lemony color and the delicate spring-like fragrance of fresh citrus. It's wonderful with cheese. Try it drizzled over a soft, mild cheese, a wedge of Pecorino Romano, or a pungent blue. It's lovely in tea as well.
