Review of Pomegranate balsamic Vinegar

Pomegranate balsamic VinegarI picked this up on a whim in a gourmet food store. It has the full flavor of pomegranates with just the right amount of tartness that isn't overwhelming.I have used it to make glazes and vinaigrettes.I use this easy recipe for a vinaigrette:

1 1/2 tbsp. pomegranate balsamic vinegar
1 tsp. dijon mustard (use a good brand)
1 tbsp. extra virgin olive oil
1/2 - 1 tsp. grated asiago or parmesan cheese
Sugar or sweetener, if desired (I use about a 1/2 packet of Equal)

Place all ingredients in a small bowl, mix with a wire whip until blended.Makes a single serving.

The pomegranate vinegar takes the vinaigrette to a whole new level. Try substituting this in recipes that use either balsamic vinegar or red wine vinegar to add a new twist.
