Review of Chocolate - White - 1 kg Callets

Callebaut chocolate is all good chocolate, but this white chocolate is the best I've had. If you are a fan of white chocolate, this will make your knees weak. Seriously.

The "callets" are like flat chocolate chips, and melt easily. I used them to make ganache for truffles.

Product Description
This white chocolate (couverture) is excellent for eating and is great for baking, enrobing cakes with a medium thick layer of chocolate, and for moulding. These callets are round drops of pure chocolate, easy to melt or temper, weigh, and store, and a divine taste in recipes calling for chunks of chocolate. The callets are made using 100% pure cocoa butter and a dash of vanilla that accentuates the creaminess. Pure chocolate requires tempering to obtain a high gloss for chocolate making.
25.9% cocoa content; 23.7% milk solids.
1 kilogram/2.2 pound bag.
Kosher (dairy) [not repackaged under kashrut supervision].
Ingredients: sugar, cocoa butter, whole milk powder, soy lecithin added as emulsifier, natural vanilla.

This item has been repackaged from a larger size and is not in the manufacturer's original packaging.
Note: Due to the nature of this product, the chocolate may melt during shipping. This does not ruin the chocolate; the chocolate is perfectly fine. Occasionally there may be light-coloured streaks or film on the surface of the chocolate. This occurs naturally and is a characteristic of pure chocolate. It will disappear when the chocolate is re-melted..

Review of Callebaut Baking Cocoa Powder 2.2lb. bag

After Hershey decided to "improve" it's Dutch chocolate I had to find a replacement for my chocolate desserts.I brought every brand Amazon sold and tried them in my ice cream receipe. The taste just wasn't right, so I knew the cakes, pies and other desserts would be a disappointment to a family of chocoholics until I tried Callebaut.The taste is what you want for ice cream, and no one could believe I could make a better devil's food cake than I already did.So don't waste your time or money, stick with a proven winner!

Review of Chocolate - Bittersweet - 1 kg Callets

The chocolate flavor shines in this bittersweet chocolate. The "callets" are the right size for melting easily (I used them for truffles). This is good chocolate, worth the price.

This bittersweet chocolate (couverture) is excellent for eating, enrobing cakes with a thick layer of chocolate, preparing dense chocolate fillings and ganache, and for piping chocolate decorations. These callets are round drops of pure chocolate, easy to melt or temper, weigh, and store, and a divine taste in recipes calling for chunks of chocolate. The callets are made using 100% pure cocoa butter and a dash of vanilla that rounds off the taste with a slight sweet hint. Pure chocolate requires tempering to obtain a high gloss for chocolate making.
72.4% cocoa solids.
1 kilogram/2.2 pound bag.
Kosher (dairy) [not repackaged under kashrut supervision].
Ingredients: cocoa mass, sugar, fat-reduced cocoa powder, soy lecithin added as emulsifier, natural vanilla. May contain traces of milk protein.
