Arrived within two days.I ordered 3 packages.I studied cooking at California Culinary Academy in San Francisco, and used to have access to the one big poultry supply houses in that city.I was always using this kind of duck breast in many of my recipes.Alas, I live in Tucson now and don't have as easy an access this item.These duck breast were as great a quality of those I used to purchase directly from the suppliers in San Francisco.This company is my new source for game and I will be using them exclusively from now on.

A boneless hen breast is like a duck steak. It is the cut favored by restaurants because each side weighs about 8 oz and makes a nice portion.
