Review of Humboldt Fog

Humboldt FogThis is an amazing work of art and love!! The first layer of the cheese is made from the morning milking, the vegetable ash is then layed down, and the second layer is from the evening milking. The result is a lovely product that needs to breathe for about 45 minutes after removing from refrigeration---although the wait is tortuous, it would be a crime not to allow it this time to ready itself for the palate. It is worth the wait and the money. The cheeses is smooth and rich and lucious!! It is now my very favorite cheese!! It simply fills your mouth with indescribable flavors. Try it and you won't be disappointed!! Consider no cracker, or something with no strong flavor of its own. It would be a shame to compromise the cheese.

We're excited to add this lovely cheese to our collection. Made right here in the USA, Humboldt Fog gets it's name for the rolling fog that emerges from the ocean in California's Humboldt county. This poetically-inclined cheese is creamy and smooth, with a bloomy rind (edible) and a tangy flavor that pairs well with fruits for dessert or on a cheese plate. A disctinctive layer of ash divides the cheese in half, much like Morbier. Made from the milk of only a handful of selected local dairies. Serve with honeycomb, pears and a crisp white wine, or a salad with mandarin oranges and cranberries. Goat's milk. Approx. 14oz wheel.
